Refrigeration is the process of moving heat from one location,to another location where it is less objectionable. Winery(and other industrial) refrigeration systems typically employ a compression cycle to achieve this. The heat is transferred from the juice or wine to the evaporating refrigerant at the evaporator and the heat is discharged from the refrigerant at the condenser. The compressor increases the pressure (and consequently the temperature) of the refrigerant driving the cycle.
